Leftover Rice Dodol

If you are looking for an easy, cost-effective method of making dodol, this recipe is for you. You do not need to throw away leftover rice anymore. You can convert it to a delicious dodol.

Ingredients:

  • Cooked Rice – 350g
  • Thick Coconut Milk – 1250ml
  • Grated Jaggery – 500g
  • Ground Cardamom – 7-8
  • Cashew - 100g
  • Salt – 01 tsp
  • Sugar – 50g
  • Coconut Oil (If necessary)
  • How to cook:

  • Blender cooked rice with half of coconut milk. We need to blend this until it becomes like a smooth paste without any clots.
  • Then combine grated jaggery with some coconut milk and sugar. Heat this until sugar and jaggery dissolves completely with coconut milk.
  • Add ground cardamom and salt as per your taste.
  • Add cooked rice paste and rest of the coconut milk. Stir this thoroughly until this rice paste combines very well with the jaggery mixture.
  • Now it needs to continuously stir this dodol mixture until it comes to the right consistency.
  • If you feel like dodol mixture has become dry, add some coconut oil. If your mixture produces oil it doesn’t need to add oil separately.
  • When the mixture becomes thicker add chopped cashew.
  • When the mixture is ready, transfer it to a greased pan and let it cool down completely. As it cools down the dodol will well set.
