Australian Lamingtons

Lamington is a very easy Australian delicious treat. These little cubes of butter cake dipped in chocolate and coated with desiccated coconut are delicious.

Ingredients:Butter Cake

  • All-purpose Flour – 250g
  • Sugar – 250g
  • Butter – 250g
  • Eggs – 04
  • Milk – ¼ cup
  • Baking Powder – 02 tsp
  • Vanilla Essence – 01 tsp
  • Ingredients:Chocolate Icing

  • Melted Butter – 50g
  • Fresh Milk – 160ml
  • Cocoa Powder – 45g
  • Shifted Icing Sugar – 290g
  • Salt – A pinch
  • Ingredients:Coating

  • Desiccated Coconut – 250g
  • How to cook:

  • To make the butter cake, first beat butter and sugar until creamy.
  • Then add eggs one at a time.
  • After that add vanilla.
  • Mix baking powder with flour, sieve it and gradually add flour to the butter mixture.
  • Add fresh milk.
  • Bake the cake around 35-40 mins under 180C in a pre-heated oven.
  • After baking let the cake cools down completely. It is better to keep the cake around 02 hours in the fridge. Then it will be easy to perfectly cut the cake.
  • To make chocolate icing, mix melted butter with milk.
  • Add cocoa powder into this.
  • Finally add icing sugar and a pinch of salt.
  • When the cake cools down if needed cut edges and the top. Then cut the whole cake into equal cubes.
  • Get a cube, dip it in prepared chocolate icing. Once the cube is all coated, cover it with desiccated coconut. Repeat the process to make all Lamingtons.
