Spiced Holiday Delight: Gingerbread Cake

Gingerbread cake is a warmly spiced, moist, and flavorful dessert that's beloved during the holiday season. Made with ingredients like ginger, cinnamon, cloves, and molasses, it boasts a rich, aromatic taste that's both comforting and festive. Often served as a cake or loaf, it can be topped with a variety of frostings or enjoyed simply on its own for a delightful treat that captures the essence of the holidays.


  • All-purpose Flour – 180g
  • Baking Powder – 1 ¼ tsp
  • Baking Soda – ¼ tsp
  • Salt – ¼ tsp
  • Ground Ginger – 01 tsp
  • Ground Cinnamon – 01 tsp
  • Ground Cloves – ¼ tsp
  • Ground Cardamom – ¼ tsp
  • All Spice – ¼ tsp
  • Hot Water – 120ml
  • Molasses – 120ml
  • Granulated Sugar – 120g
  • Melted Butter – 85g
  • Eggs – 02
  • Vanilla – 01 tsp
  • Powdered Sugar

How to cook:

  • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, ginger, cinnamon, all spice, cloves, and cardamom.
  • In a large bowl, mix molasses and hot water. When molasses is mixed with hot water it is super easy to combine it with rest of the ingredients. You can substitute molasses with honey.
  • Stir in sugar and melted butter until well combined.
  • Then add eggs and vanilla. It is better to beat eggs a bit in a separate bowl before adding to molasses.
  • Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  • When all ingredients are well mixed, pour the batter into an 8” round baking tray and bake the cake around 30-35mins under 180C in a pre-heated oven.
  • Let the cake cool down completely. You can serve this delicious gingerbread cake plain or dusted with powdered sugar.
