Last Minute Dried Fruits and Nuts Cake for Christmas

If you couldn’t make a Christmas cake in advance, this is a perfect cake that you can bake even in the last minute. This fruit and nut cake is also like a Christmas cake.


  • Chopped Nuts - 300g
    • Cashew
    • Almond
    • Hazelnuts
    • Pistachio
    • Walnuts
  • Chopped Dried Fruits - 400g
    • Apricots
    • Dates
    • Paw Paw
    • Kiwi
    • Raisins
    • Mango
  • Light Brown Sugar – 160g
  • All-purpose Flour – 95g
  • Baking Powder – 2g
  • Baking Soda – 2g
  • Pinch of salt
  • Large Eggs – 03 (Room Temperature)
  • Vanilla – 01 tsp

How to cook:

  • Combine all chopped dried fruits, nuts, and sugar in a bowl.
  • In a separate bowl, mix flour, baking powder, baking soda and salt together. Put this flour mixture into the fruit and nut bowl and coat all of them with flour by using your hands.
  • Again, in a separate bowl, beat eggs. It needs to beat eggs until they become creamy and pale in color.
  • After that add vanilla and beat bit more.
  • Gradually add fruits and nut mixture into beaten eggs and mix it thoroughly.
  • Finally, transfer the cake mixture into a 20x5cm (8”x2”) round baking tray and bake the cake around 60-70 mins under 150°C in a pre-heated oven. It doesn’t matter if the cake mixture fills even more than half of the baking tray. This cake won’t rise a lot while baking.
