Double Chocolate Muffins

These nice looking, high top, soft muffins with loads of chocolate chunks in the middle will be a perfect snack for your teatime and a great school snack. Enjoy these chocolaty and descent muffins.

Ingredients:For 12 muffins

  • Eggs – 03
  • Sugar – 140g
  • Salt – ½ tsp
  • Vanilla – 01 tsp
  • Whipping Cream – 200ml
  • Cocoa Powder – 40g
  • Baking Powder – 02 tsp
  • All-purpose Flour – 210g
  • Bittersweet Chocolate Chunks – 120g
  • How to cook:

  • Beat whipping cream until it forms peaks.
  • Combine cocoa powder into whipped cream and set aside.
  • In a separate bowl, beat eggs, sugar, salt, and vanilla together.
  • Gradually add this egg mixture into the prepared whipped cream mixture.
  • Mix baking powder with flour and gradually add flour mixture into the egg whipped cream mixture.
  • Finally add chocolate chunks.
  • Place cup cake liners on the muffin tray, fill them with the batter and add more chocolate chunks on top.
  • Bake these muffins around 20 mins under 180C in a pre-heated oven.
