Basque Burnt Cheesecake

Basque burnt cheesecake is a delicious and rustic dessert that originates from the Basque region of Spain. It's known for its creamy, custard-like interior and a beautifully caramelized, slightly burnt exterior, which gives it a unique and irresistible flavor and texture.

Ingredients:

  • Cream Cheese (Room Temperature) – 350g
  • Sugar – 100g
  • Salt – ½ tsp
  • Eggs (Room Temperature) – 02
  • Vanilla – 01 tsp
  • Whipping Cream – 180ml
  • All-purpose Flour – 15g

How to cook:

  • Apply butter or oil in your baking tray and line it with two parchment sheets. Make sure it comes about two inches above the pan.
  • In a separate big bowl, beat cream cheese, sugar, and salt until smooth.
  • Add eggs one at a time.
  • Add vanilla.
  • While beating add whipping cream.
  • Finally add flour and beat at low speed.
  • Transfer the batter in to prepared 8” x 2” baking tray and bake the cake around 55-60 mins under 200C in a pre-heated oven until deeply golden brown.
  • While baking if the top of the cake burns too fast cover it with an aluminum foil and bake the rest.
  • As soon as the cake comes out of the oven it is jiggly in the center. Let it cool down to room temperature and it will all set.
